My friend Barb (from DC) made it for me once & I was hooked, too.<br />1 small onion, chopped<br />2-3 Tbs. olive oil<br />2 cloves garlic, minced<br />2 15 oz. cans black beans<br />1-2 cups chicken or veggie stock<br />cumin, salt, pepper<br />Saute onions in oil for about 15 minutes, until soft. Add garlic for about a minute. Toss in beans and cook through, maybe 10 minutes. Throw in stock and cook another 10 minutes. Use an immersion or regular blender to puree as chunky or smooth as you like. (Sometimes I add a smoked chipotle w/ the garlic). Use cilantro & lime to garnish.
