Chocolate Chip Bars

It's a good thing that my Aunt Betty doesn't have a computer, because she may be disappointed that I have changed up one of her & my mom's "classic" recipes. Sorry, Mom, I know you are reading this.

Their chocolate chip bar recipe has been in our family as long as I can remember & it is a quick, rich bar cookie that we all love.

2 eggs
1 1/2 cups packed dark brown sugar
1/2 cup butter, softened
1/4 cup oil
1 tsp. vanilla
1 1/2 tsp. baking powder
1 tsp. salt
1 2/3 cup flour
1 bag chocolate chips

Beat eggs until thick & foamy. Add sugar and beat. Add butter, oil & vaniila and mix. Sift in dry ingredients and finally chocolate chips. Pour into greased 9 x 13 pan and bake at 350 for about 25 minutes.

I tried to take a picture, but the camera is not working! I have a feeling that Charlie is the culprit...

  1. Besides the butter and no nuts what did you change? I made these for our monthly evening church gathering and a little Indian boy ran up to me and said they were the best thing he ever had.

    Um, I upped the flour and it was originally 2/3 cup oil, but I preferred the (heavy) butter & oil combo. I also used dark brown sugar-makes a sugary crust on top. Their recipe also only used 1 cup chips...cannot stop at 1 cup. You tell that child that you will make him another batch and do a blind taste test. Even without the changes, they are delicious.
    We miss you guys! I am praying for you-AND do you want to engage in a little exercise competition...walking????

  6. Susan...I can't find my copy of mom's chocolate chip bar recipe so I tried yours last night. You will be pleased to know that John thinks yours are better. However, my heart is still with the original Mom/Aunt Betty recipe...maybe its for nostalgic reasons but I just love their chewiness. :)
