  2. Looks and sounds great! I wish I could have been there. Any crazy games played? I was in charge of the game room for the women's retreat and due to large amounts of sugar consumed and a late night we had women wrestling over a game and pregnant women almost getting stabbed in the belly with pencils.

  3. Can you either post or link to the black bean soup recipe? It was amazing!

  4. Amy, I just winged it so I will give you my best estimates for 4 servings. My friend Barb (from DC) made it for me once & I was hooked, too.
    1 small onion, chopped
    2-3 Tbs. olive oil
    2 cloves garlic, minced
2 15 oz. cans black beans
1-2 cups chicken or veggie stock
    cumin, salt, pepper
Saute onions in oil for about 15 minutes, until soft. Add garlic for about a minute. Toss in beans and cook through, maybe 10 minutes. Throw in stock and cook another 10 minutes. Use an immersion or regular blender to puree as chunky or smooth as you like. (Sometimes I add a smoked chipotle w/ the garlic). Use cilantro & lime to garnish. Sour cream or Greek yogurt dolloped on top is good, too!
